Cellared correctly, Katnook Odyssey will age gracefully for up to 20 years.
Katnook Odyssey is created from small parcels of premium Cabernet Sauvignon grapes, sourced from the estate’s terra rossa vineyards that consistently produce exceptional fruit with outstanding depth of flavour and firm tannin structures. Coonawarra received good winter rains, which set up the vines well for the growing season. Temperatures during the growing season were warm with minimal heat spikes, the steady temperatures continued through vintage. There was minimal vintage rains, which reduced any pressure of disease.
Oak Maturation: Matured for 18 months in 70% new French oak, this wine displays a seamless blend of rich fruit and extended oak maturation.
Colour: Medium crimson.
Nose: This cabernet sauvignon greets the wine lover with bright, aromatic notes. Red and purple fruits, such as plum and blackberries abound. There is a backbone of spices adding complexity to the aromatics, the wine shows all the hallmarks of the region from which it has come from.
Palate: The palate is bright, fresh and vibrant yet full and supple. Flavours of satsuma plum, raspberries and cassis are supported by supple, yet defined tannins and quintessential cabernet sauvignon structure, spices and hints of cedar finish off the lovely long palate. The wine shows great tension, providing an insight to its potential longevity.
A complex array of concentrated fruit and oak flavours. Rich blackberry, black cherry and plum with hints of vanillin and mint are complemented by fine-grained tannins and extended oak maturation characters.
Coonawarra's 2015 was amongst the earliest on record. An ideal growing season of slightly above average temperatures and dry conditions produced outstanding Cabernet Sauvignon grapes.
Matured for 36 months in oak barriques, 74% French (32% new) and 26% older American oak. Structure, complexity and length are enhanced by fine grained tannins.

The concentrated flavours of Odyssey will pair well with full flavoured dishes such as grilled ribeye with blue butter, slow roasted lamb shanks or an onion & gruyere cheese tart.
