Our Sherry cask solera is made up of 42 casks, some from Spain and some from our mates who make the famous Australian fortified wine now known as Apera.
They’re much older than our Chardonnay barrels, varying in age from 15 to 35 years old and our solera releases are taken only from the bottom row of barrels.
The colour of our Sherry Cask Gin has continued to deepen as the barrels age. It is the richer and more layered of the two barrel-aged gins, with residual sherry characters underpinned by juniper or pine oil notes. We’re seeing a palate dominated by hazelnuts, dried fruits, cassia and soft hints of star anise.
We’ve added less Amontillado Sherry this year than in 2018, as the sweetness is progressively coming more and more from the barrels themselves. Sip it neat over ice or try it in a Tuxedo, or one of these Four Pillars Gin originals.
