Site selection for Adelaide Hills Merlot is absolutely key. The 2016 vintage was sourced from low yielding premium vineyards in Kuitpo and Kersbrook with an average vine age of 20 years.
A very dry Spring and warm Summer led to our earliest start to vintage on record. Cool to mild February nights coupled with warm dry days ensured optimal flavour development whilst retaining naturally high acid levels.
After being harvested in the cool of the morning, the fruit was destemmed and partially crushed directly into small open fermenters. To maximise colour, flavour and tannin extraction the wine was fermented on skins for 7 – 10 days before being transferred to fine grained French oak barrels to age for 20 months. Each Merlot barrel is sampled and analysed by the winemaking team who look for complexity, acidity, colour and tannin structure to craft the most complete wine.
The resultant wine is a deep ruby red with distinctive regional characters of plum, black olive and tobacco leaf with a touch of nutmeg and spice which follows through with fleshy mid palate and slight gravelly tannin finish.
This wine will pair well with a wide variety of dishes including roast turkey with vegetables at Thanksgiving or Christmas to beef wellington or simply good roast duck.
